Five Favorite Dishes from Our Winter Menu

At the start of winter, we welcome seasonal changes to our menu. Each year we look forward to the arrival of new ingredients, heartier entrees, and richer sauces. We take full advantage of favorite in-season ingredients like mushrooms, black truffles, and root vegetables. Rich sauces like Marsala are added to entrees, and guests find comfort in favorite pasta dishes like the Scungilli and Rigatoni. During this time of year, we also become extra appreciative of our wood-fired grill which lends a subtle smoky flavor to our meat and seafood entrees. Read on to see which dishes top our list of favorites from the Winter 2017 menu:

1. Four Cheese Fonduta

A guest favorite and a staple on our menu, the Four Cheese Fonduta becomes even more irresistible in the colder months. As you could have guessed from the name, it’s a blend of four cheeses, including Fontina, Asiago, Pecorino Romano, and Muenster. The warm bubbly cheeses combine with Roasted Garlic and Sopressata, for a perfect decadent bite to be soaked up with toasted bread. Enjoy it on our main menu in the dining room or at the bar menu in the bar and lounge. We think you’ll find that it pairs perfectly with a beer from our tap list!

2. Ricotta Gnocchi

Some of our favorite things are combined in this singular dish! Our winter Gnocchi prep includes Hen of the Woods Mushrooms, Parmesan Crema, Marsala, and Truffle Oil. Made with Ricotta, this dish is an elevated version of the traditional potato gnocchi. Soft pillowy bites covered in parmesan crema and marsala make for the perfect comfort food and will surely chase away any winter blues. The gnocchi is handmade fresh in our kitchen daily!

3. Pork Belly

The Pork Belly is new to our Primi menu, and it's already become a favorite among guests, who have been giving it rave reviews! This first course dish is tender, juicy, and perfectly savory. The cut of Heritage Pork is caramelized with Honey & Peppercorn and served with Sweet Onion Jam and Blistered Peppers. We think you’ll love it as much as we do. 

4. Veal Chop

When we’re looking for a savory and warming main course, one of our seasonal favorites is the Veal Chop served with Mushroom Marsala and Parmesan Polenta. At 16 oz., our Veal Chop is one of the largest entrées that we offer, and is sure to satisfy any appetite. Cooked on our wood grill, the velvety smokiness of the Veal pairs beautifully with the rich and creamy Parmesan Polenta and the complex flavor of the Mushroom Marsala.

5. Pork Shank

Another entrée favorite is the Berkshire Pork. It’s Marasala Braised and served with Sweet Potato Mash, Foraged Mushrooms, Roasted Carrots and Brussels Sprouts. Perfectly charred vegetables make for the ideal accompaniment to the juicy cut of Pork. We use Berkshire Pork, which is a heritage breed that originated over 300 years ago in Berkshire County in the United Kingdom. It’s known for its distinctive richness, juiciness, texture and marbling.

On the side, we recommend satisfying 'Contorni' options like the Spiced Acorn Squash with Rosemary, the Crisp Brussels Sprouts with Grilled Bacon and Lemon Aioli, or the Wild Mushroom Risotto with Truffle Oil.

Pair your meal with a bottle of wine or one of our winter cocktails like the ‘Red Mule’ made with Mezcal, Pomegranate, Ginger Liqueur and Ginger Beer. And finally, round out the evening with one of our satisfying desserts like the classic Cioccolato Warm Chocolate Molten Cake or the Ciambella, Apple Cider Donut Rounds with Vanilla Anglaise and Honeycrisp Cider Glaze.
